All our fruit is hand-selected, and we follow traditional methods such as making use of spontaneous fermentation and no acidification. Organic compost and mulch are ploughed back into the soil, while our use of green-harvesting (low yields per hectare) ensures that our vineyards are not over-produced.
Our philosophy of working hand-in-hand with nature to create unique wines and spirits carries through into the cellar, where our small, hands-on team approaches their work with passion and creativity. The end result is a product that is pure, natural, and made to be enjoyed.

Neil has worked at some of the Cape’s leading wine estates as well as spreading his wings to experience wine-making in Oregon and Australia.
Together with his two-and-a-half years of working closely with former wine-maker Thinus Neethling, Neil knows the vineyards and wines of Chamonix extremely well and shares our vision of continuing to be seen as a leading South African winery known for a range of terroir-expressive wines reflecting the unique site of our Franschhoek location.
